Cookery Demonstrations

Lesley Orr trained in London at the Cordon Bleu Cookery School, before gaining experience in a number of well known kitchens including Thornbury Castle and Popjoys in Bath. After teaching cookery for over two years, first at the Cordon Bleu and then at Prue Leiths School of Food and Wine, she and her husband, Robert, established the Bay Tree Restaurant in Johannesburg, which they ran for five successful years and which still flourishes.

The Format

A Day at Causeway Cottage

* Coffee and homemade biscuits - 10.00am.

* Demonstration - 10.30am.

* Refreshments will be served prior to lunch.

* Lunch will consist of all the dishes demonstrated on the day.

* Cost £55.00 per person.

The Causeway Cottage

Potted Ham with pickled walnuts, was flavoured with lots of parsley and mustard,very useful starter able to prepare a few days in advance.

Smoked mackerel and Parsnip fish cakes, easty to make, a good balance of tasty fish and parsnip (usually fishcakes are all potato and not enough fish).

Ballotine of Duck, is boned stuffed ducks legs stuffed with pork, cranberry, pecan and orange stuffing. Look after themselves whilst roasting due to the fat under the duck skin, so no hassle after the preparation.

Lintzer Torte a Classic from Austria amazing nutty and spiced pastry with cherry filling.

Amaretti Creams Simple to make, freeze well and work well with almost all fruits so suitable at all times of the year.
